Σούφρα

Soufra

250gms unsalted butter

1 pkt greek filo

- scrunch pastry and pour melted butter over – fan 1cm wide

- bake in mod oven until brown – about 15 minutes

CUSTARD

4 eggs

5 1 ½ cups milk

6 1 cup caster sugar

7 1 tspn vanilla

8 1 tablespn baking powder

9 300ml thickened cream

10 3 ½ dessert spoons cornflour

Beat together – pour over hot pastry

Sprinkle with coarsely chopped pistachio nuts

Bake 180 until custard is set – about 25 – 30 minutes. Put some alfoil loosely over the top if it is getting too brown. The custard will continue to cook when it comes out of the oven so don’t be tempted to overcook it.

When cool sprinkle with cinnamon and sugar
